South Beach Recipe – Creamy Crockpot Chicken and Tomato Soup

When I recommitted to South Beach I knew I wanted to find some new recipes to try so it wasn’t the same old meals every week.  I turned to Pinterest and have found some real winners.

My favorite find so far is Creamy Crockpot Chicken and Tomato Soup.  The recipe can be found here.

I eat it just as it is for a healthy Phase 1 South Beach soup.

My family cooks up some rice pilaf and adds it to their soup to make it a little heartier:

It has a slightly “exotic” taste as described by my very picky teenager, because it includes coconut milk.  This was my first attempt at cooking with coconut milk and I was pleased by how tasty it turned out.

The only thing I did different than the recipe was to use Rotel hot diced tomatoes instead of the diced tomatoes called for in the recipe.  And I don’t like chunky tomatoes, so I put them in the blender for a few seconds to puree them.

This is a super easy recipe because the only prep is to chop up an onion and some garlic.  Everything else is open and pour in.  Turn the crockpot on and you’re basically done.
